BBQ chicken drumsticks: A Finger-Lickin’ Good

Ingredients

16 chicken drumsticks
5 tbsp tomato sauce or tomato puree
14 ml soy sauce
1 tbsp balsamic vinegar
1 tbsp honey
5 tbsp brown sugar
1 tsp wholegrain mustard
1 tsp Dijon mustard
Juice and zest of 1 orange
Black pepper to taste

Instructions

  1. Prepare the marinade: In a large bowl, combine tomato sauce, soy sauce, balsamic vinegar, honey, brown sugar, wholegrain mustard, Dijon mustard, orange juice, orange zest, and black pepper. Stir well to combine.
  2. Marinate the chicken: Add the chicken drumsticks to the marinade and toss to coat evenly. Cover the bowl with cling film and refrigerate for at least 2 hours, or overnight for maximum flavor.
  3. Preheat the grill or oven: Preheat your grill or oven to 200°C (400°F).
  4. Cook the chicken: Place the marinated chicken drumsticks on the grill or in the oven and cook for about 30 minutes, or until cooked through and the juices run clear. Flip the drumsticks halfway through cooking for even browning.
  5. Serve: Serve hot with your favorite barbecue sides.
